Soba noodles are served in two ways: hot in soup or served cold on a screen (usually made of bamboo) with a dipping sauce and condiments, creating a great summer dish
Recommended preparation: Bring water to a boil; put soba into the boiling water; as soon as the noodles become soft, drain well and rinse with cold water; put soba on top of a bamboo screen and serve with diluted Yamaki Mentsuyu, chopped green onion or grated radish and ginger, and wasabi; for cold soba, mix the condiments into the dipping sauce, then lift up the noodle completely from the bamboo screen with chopsticks, partly dipped them into the sauce, and eat
